How can I support the follicle phase by eating spring vegetables?

A diet rich in plant-based proteins, fiber, and antioxidants, such as those found in pea and zucchini soup, is recommended to support the follicular phase of the female hormonal cycle. These foods support hormonal health and follicle maturation. The ingredients in this recipe promote good digestion and glycemic balance.

Ingredients:

  • 1 zucchini
  • 1 red onion
  • 1 tablespoon olive oil
  • 2 cloves of garlic
  • 1 handful of coriander
  • 500 grams of peas
  • 400 ml vegetable stock
  • 200 ml coconut milk (can)

Preparation method:

  • Finely chop the onion and garlic and stew them in olive oil in a pot.
  • Cut the zucchini into large chunks and add them along with a pinch of salt. Let everything simmer for 3 minutes.
  • Add the peas and vegetable stock. Let everything simmer for 25 minutes.
  • When everything has cooked through, blend the soup.
  • Add the coconut milk and mix well. Dilute with a little water if necessary.
  • Finish the soup with fresh coriander leaves.
