Egg Muffins: The Perfect Snack During Your Ovulation Phase (and for Easter Brunch)

Egg muffins are easy to digest, packed with nutrients and protein, and incredibly versatile. You can fill them with hormone-friendly ingredients like spinach , feta, cottage cheese , or smoked salmon . Ideal as a quick snack or nutritious meal, at home or on the go.
Ingredients

8 eggs

30 g fresh spinach, chopped

150 g cherry tomatoes, chopped

100 g ricotta
-
100 g smoked salmon, minced

60 ml milk (dairy or plant-based)

Salt and pepper to taste

1 tbsp dried dill or fresh herbs (optional)
- Olive oil or baking spray (for greasing)
Preparation method

Preheat the oven to 180°C and grease a muffin tin with olive oil or baking spray.

In a large bowl, whisk together the eggs and milk until smooth. Season with salt, pepper, and optional herbs such as oregano or dill.

Add the chopped spinach, ricotta and smoked salmon to the egg mixture and stir gently.

Divide the mixture among 8–10 muffin cups .

Bake the muffins for about 18 minutes , until firm and lightly golden brown.

Let them cool for a while before removing them from the mould.
- Serve warm or store in the refrigerator for up to 3 days .
