This cod, curry, and coconut recipe is not only delicious but also a nutritious choice, combining a balance of protein, healthy fatty acids, antioxidants, and essential nutrients. This tasty and exotic dish is a must-have for your health.

Ingredients:

  • 350 g cod fillet
  • curry paste
  • ½ red onion
  • 1 red bell pepper
  • 2 cloves of garlic
  • lemon juice
  • 2 tablespoons soy sauce
  • 200 ml coconut milk (can)
  • 300 g wild rice
  • ½ bunch of parsley
  • 1 cm ginger

Preparation method:

  • Finely chop the ginger, garlic, onion and red pepper
  • Melt coconut oil in a pan and fry the ginger, garlic, red pepper and onion until translucent.
  • Add the curry paste and fry for a minute.
  • Add the coconut milk and cook for 5 minutes.
  • Cut the fish into large chunks and place them in the sauce. Let the fish cook for 5 minutes (without boiling the sauce).
  • Serve with wild rice and parsley.
